# Instructions:

01 - Peel and quarter 2 lbs Yukon Gold potatoes. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over high heat, then reduce to medium and cook for 15-20 minutes until fork-tender. Drain well and set aside.
02 - While potatoes cook, heat 1 tbsp olive oil in a large pot or Dutch oven over medium heat. Add 1 large yellow onion, 2 carrots, and 2 celery stalks, all diced. Sauté for 8-10 minutes until the vegetables have softened.
03 - Stir in 4 cloves garlic, 1 tsp dried thyme, 1 tsp smoked paprika, and 1/2 tsp ground cumin; cook for 1 minute until fragrant. Add 2 tbsp tomato paste, 1 (14.5 oz) can diced tomatoes (undrained), 4 cups vegetable broth, 1 cup rinsed brown or green lentils, and 1 bay leaf. Bring to a simmer.
